Keyhung is in the Indian state of Assam which lies north of Burma, north-east of Bangladesh and south of China. The state of Assam is a security controlled area particularly so since it borders China. During the Chinese invasion of India in 1963 the invading troops stopped not far from Keyhung before peacefully returning to China a few weeks later.

Keyhung is a very large estate covering some 3 square miles of which 2 square miles or 1300 acres is under tea production. Keyhung employs about 3000 laborers who are engaged in plucking, estate husbandry and tea manufacturing. In essence, Keyhung is a small town as the families of the laborers all live on the estate. In total nearly 10,000 people live here. The owners are well regarded as excellent employers; providing housing, schooling and medical facilities right on the estate. Land that is not used for tea cultivation is loaned to the families so they can grow vegetables for their own consumption and sale at the weekly market that takes place on the estate.

In the bamboo groves near the manager's bungalow live hundreds of monkeys. Having breakfast with the state manager is enjoyed with a cacophony of screeches and cries from the monkey families.

Tarajulie is a beautiful estate that lies in the shadows of the Himalayan mountains on the Bramaputra River plain. On a clear day, the majestic mountains are visible on the northern horizon. The estate was purchased by the George Williamson Group of companies in the mid 1980's and they have maintained the high standards that this estate was known for. The estate produces only orthodox manufactured tea. From time to time on the estate they contend with wild elephants and the occasional tiger. Not too many years ago intrusions by wild animals were not welcomed. Today, however, these "visits" are not seen in the same light. In fact, Tarajulie has maintained some of the forested areas on the estate to provide cover for these endangered animals.

You might ask - What gives Assam tea its special characteristics? The Assam valley is dominated by the Brahmaputra River - a large slowly meandering river which over millennia of spring and fall flooding has deposited a rich loam over the valley. The soil is a deep and sandy and the region suffers a very hot and steamy monsoon season, but equally important a relatively dry and cool winter. Perfect for the Assam tea bush. This area is also susceptible to earthquakes which can make the ground swallow up whole tea bushes but this does not affect the unmistakable rich taste of Tarajulie FBOP.

Second Flush Assams typifies the best qualities that this particular type of Indian tea has to offer. The full bodied maltiness and rich pungency of an Assam is even more pronounced in this season. Although the Assam region does not benefit from the high elevations, this area has remarkable soil alluvial and ideal temperatures for tea. Teas from the Assam tend to be higher in natural tannins and therefore are more astringent and have a "thick" nose. These attributes are highly desirable characters and this particular selection from the Gingia Estate is very rich example - to the point of distinction.

The British became interested in tea cultivation in the Assam region of India in the 1830's when it appeared that arrangements with China which included tea were not going to be extended. The East India Company made representations to the British Governor of India to be allowed to research the possibility of tea cultivation in India. These discovered a hardy camellia that was indigenous to Assam. This particular genus of the camellia eventually became know as the "Assam jat" and today forms the backbone of Assam tea plantations. The "Assam jat" as compared to the "Chinese jat" has more body and richness, whereas the "Chinese jat" tends to be light and flavory.

Selections like this Gingia make the tea tasters work a pleasure. The taster "lives" to find a "cracker" (a.k.a. superior quality tea). This tea was one of the best we have seen from the Assam. It is a self-drinker and has enough flavour and character to hold its own, even with milk and sugar.

The Northeast region of India is the world's largest regional producer of tea. The tea growing regions in the area are the Dooars, Cachars and Assam - Assam being the most important. In total, approximately 20% of the world's annual production (Assam produces nearly 500,000,000 kilos of tea) is produced here. It is noteworthy to point out that the tea production only takes place for 9 1/2 months since the tea bushes are dormant due to cold weather from mid December to end February - sometimes into early March if it is an extraordinarily cold winter.

From May through to mid July, the scenery and aroma in this region is unbelievable. The area is a hubbub of activity - tea fields virtually festooned with the tea pluckers in Joseph-like multicolored garments, thousands of tons of green leaf being transported down country roads to the tea factories, a beehive of activity at the factories to process the green leaf at the `"peak" of its quality, markets, children coming home from school - it is truly an incredible scene.

Dufflaghur is an estate on the north bank of the Brahmaputra River in the central region of the Assam province called East Boroi. Dufflaghur is a "dual production" estate - meaning it can produce both Orthodox and CTC teas. Generally orthodox teas are produced in the first 4 months of the new season corresponding to top quality and highest prices. This BPS grade is special and comparatively an unusual tea. It is actually a product of the orthodox manufacturing process but represents less than a quarter of one percent of Dufflaghur's annual production - hence its rarity. The young leaves are tightly compressed into little balls during a rolling process during manufacturing thus retaining the inherent qualities of this very good Assam tea very well.

It is interesting to see how this Black Gunpowder (or black pearls) uncurl. The cup quality of this tea is prized by discriminating consumers who are looking for something different in the way of tea.

Borengajuli is a wonderful tea estate that is in the Mangaldai district of Assam. On a clear day the Himalaya Mountains are clearly visible. The tea bushes of this estate have been carefully selected through natural cloning. This means that tea bushes that display outstanding characteristics such as yield, abundance of "tip," flavor, and regular and consistent sized leaf were replanted in a tea nursery. Leaf cuttings were then taken from these bushes to grow a "mother stock" of tea-like bushes. From the mother stock more cuttings were taken which were then planted in the estate. The result is a high yielding tea plantation whose produce exhibits exemplary flavor, bright coppery color in the cup and outstanding leaf style. It is no wonder that Borengajuli has become one of the most sought after teas from Assam.

George Williamson pioneered vacuum packing at the estate level and Borengajuli was one the first Assam estates whose produce was vacuum packed. Tea goes through an natural oxidation process whereby it ages due to its interaction with oxygen. By vacuum packing this process is arrested until the vacuum is broken. When we repack Borengajuli it is out of a vacuum for no more than 30 minutes after which it is re-vacuumed. In essence this tea is literally 2 hours old, in terms of freshness. The only place to get fresher tea would be to go to the estate itself.

You might ask - What gives Assam tea its special characteristics? The Assam valley is dominated by the Brahmaputra River - a large slowly meandering river which over millennia of spring and fall flooding has deposited a rich loam over the valley. The soil is a deep and sandy and the region suffers a very hot and steamy monsoon season, but equally important a relatively dry and cool winter. Perfect for the Assam tea bush. This area is also susceptible to earthquakes which can make the ground swallow up whole tea bushes but this does not affect the unmistakable rich taste of Borengajuli FBOP.

Organic tea is produced without the input of chemical fertilizers or pesticides and herbicides. Unfortunately the yield per acre is lower and quite often quality can suffer compared to when fertilizers and others inputs are utilized. Nevertheless with good manufacturing techniques the cup characteristics can be maintained at a very high level. Such is the case with this tea.

This tea is a classic top quality Assam, very full bodied and tending "juicy." Quite often milk is used to tone down the strength of the tea since milk gives the tea a smoothness that is very pleasant and highlights the malty notes.

Historically, the Assam tea bush is a subgenus of Camellia Sinensis. This variety was found growing wild in the Assam province of northeast India in the 1823, when the British East India Company was studying a proposal to grow tea in India. The idea was turned down for fears that India's production might endanger their China tea monopoly. Ten years later had changed. The company's illegal trafficking had angered the Chinese government and the British Crown overrode the objections of the East India Company and backed a project to grow tea in India. By 1837, it was successfully cultivated in Assam and in May 1838 a few chests were shipped to London (true organic tea - grown before the advent artificial fertilizers and herbicides). The first consignment of 8 chests of Assam tea was auctioned off in 1839 heralding the advent of Indian Tea in the world markets.

Tea continues to play an important political role in India's development. Not only do millions of people gather their main source of family income from the tea business, but in 1946 Mahatma Ghandi in his non-violent struggle for Independence is known to have taken tea to King George-V at Buckingham Palace for their historic discussion on Indian Independence.

This tea blend was specially created taking into consideration the nuances of the various waters across Canada. To be considered as "the toast of Canada" from a tea perspective, the tea had to be able to "shine" in any water. For this reason, a broad range of origin teas were used. More than 35 various teas were tasted using the water sent to us from various parts of the country. The tasting session extended more then 2 days until the right blend was achieved which combined the best teas a synergistic relation. A few additional refinements were undertaken the final result was an outstanding tea, the best in Canada, if not North America or the world.

The Assam component (2nd flush, June Production) gives a thick malty and full bodied character. The Kenyan component gives a floral-like cup and coppery infusion whereas the South Indian component gives superb fruity and sprightly flavor with a lovely finish. From Sri Lanka (formerly called Ceylon) we used a January production Dimbula which gives an airy piquant flavor that opens the blend. Lastly, to draw everything together we added some Keemun which gives a burgundy depth with light oaky notes.

Canada has a history of consuming the best teas in the world. During the 1960's and 1970's, on a world scale, it was Canadian and Irish tea companies that paid the most for the teas which formed the basis of the blends that were readily available in their respective countries. Sadly, in Canada and to a lesser extent in Ireland, as the tea blenders became older and started retiring, the large tea companies did not see the need to maintain the quality. There were competitive pressures in the market place and these had to be met. Consequently, the overall tea quality in Canada declined over the 1980's and 1990's. Luckily, concurrent with the dramatic quality decline there was a tea trading company in existence at the time, named Hayter and Scandrett that trained it's personnel exceedingly well in the fine points of tasting and recognizing quality teas. These personnel carried the blending secrets and knowledge of fine quality tea that was later transformed into the best tea blend in Canada, resurrecting Canada's long history to drinking and enjoying the world's best teas.

A tea tasters secret recipe for a pick-me-up on a cold day - make this tea hot as above, pour into a large mug and add 4-5 slices of lemon and 2 heaping teaspoons of sugar - sit back and enjoy a tasty energy boost. Calcutta is the centre of the Indian tea trade and during it's heyday it was the centre of the British influence in India. In Calcutta the sights and flavors that abound are many and varied. • Malty and flavory with the cool accent of peppermint
Traditionally, Moroccans consume a harsh beverage prepared with fresh or dried mint leaves. The English were thought to have introduced Moroccans to tea, which was delightfully welcomed as a pleasant way to blend out the harshness of mint. The introduction came about on account of the proximity of the British at their garrison in Gibraltar. The trade links between Gibraltar and Morocco made the blending of cultures and the adoption of black tea a natural extension of their geographic position.

We have taken some liberties with this blend as Moroccans originally used green tea in their mix and we have substituted fine black teas for their strength. If you can picture yourself sitting on a long fringe carpet in a colorful tiled room decorated in bright Islamic design, sipping from a small handpainted glass, you may discover one of the many pleasures of this ancient kingdom. Moroccans say that tea should be bitter as death, sweet as life, and as mellow as love. We've tried to capture that in this cup.

The Assam component gives the tea richness, like a brocade at Versailles. Whereas the Nilgiri and Ceylon gives the tea a saucy but sprightly flavor. To cement the French character, lavender from Provence was added along with some rose petals, a tea fit for the Latin Quarter along the Seine.

Tea became the fashionable beverage in French society toward the end of the reign of Louis XIV. Members of the upper class would gather to debate issues of the day and drink tea. Princess of Palatine remarked in 1706 that tea could make one chaste and therefore was better for Catholic priests than for Protestant ministers.

French art romanticized the tea hour in their paintings as artists such as Chardin and Boucher painter teapots into the rich still-life works and portrayed society at festive teas set in exquisitely furnished rooms. They captured voluptuous women taking tea in the intimacy of their boudoirs or languishing at tea tables resplendent with silver and lace. One of the more ambitious teas paintings was Barthelemy's "Le The a l'Anglais" which he painted in 1776. The elaborate work depicts Mozart at the harpsichord performing for the gentry seated at tea tables in the Paris salon of the Prince de Conti.

What really makes French tea unique is the accompaniment of "une patisserie." Careme (1783-1833), a celebrated patisserie chef declared a pastry to be one of the noblest forms of architecture. One of our favorite methods of taking French tea is with a buttery croissant, "pain au chocolat" or "le muffin" accompanied by a fruit confiture.
