The best Sichuan teas come from the central mountain peak of Mount Meng and this tea is grown on the southern and eastern slopes of this mountain. The heavy mists that surround Mount Meng and volcanic soils provide ideal growing for the special tea. These leaves are lightly rolled to break the cells every so slightly, immediately steamed to stop any possibility of fermentation and then painstakingly hand formed and pressed before final drying. The result is an early morning fresh green tea with wonderful flavor and an extremely pale liquor.

This Jasmine is an exceptionally well-made tea. The leaves have a very tight and wiry roll with an over abundance of white mottled tips. The "tippy" nature of the tea signifies a superior tea. "Tip" is only possible when the estate practices fine plucking and a 3 or 4 day plucking rotation. The mottled effect is from teas that are plucked in the first 2-4 weeks of the new season when the days are warm but the night temperatures are piercingly cool. Further into the season when the evenings are warm as well, the bush grows 24 hours per day eliminating the possibility of fine plucking. Hyson translates to "Flourishing Spring" and this particular varietal imparts the fresh green character you would expect to be a part of any springtime tea experience. Traditionally, hyson referred to old to medium leaves (leaves below the new growing shoots at the top of the bush) manufactured in a rolled long twisted and sometimes almost clam shaped. The term "young" was added to the nomenclature to distinguish that the tea was made from young leaves (new shoots) and therefore better quality and better tasting. This tea became so highly favored in the 1700's that the British Tea Tax was actually higher for this variety over other teas. Lucky Dragon is from a specific factory that further identified their tea because even though produced in the young hyson style it is much better than typical young hyson.

Right from the first sale of tea in England in the mid 1600's, the English took a shine to tea. The government quickly realized the possibilities and levied taxes on tea that remained until the late 1700's. With all the associated taxes on tea and young hyson being taxed even higher, there were all sorts of various schemes done to dodge the taxes. Servants in upper class homes would dry the used leaves and resell them. Other unscrupulous people would "cut" the tea with leaves from various trees such as beech or hawthorn. Smuggling China teas into England reached a feverish peak in the mid 1700's and the ports of France and Belgium were used as the jump-off points for night voyages to Cornwall and Wales. The chancellor of the exchequer and the East India Company were aware of the extent of their losses and realized that only a large tax cut would make legal imports competitive with contraband tea. This finally occurred in 1784 with the passing of the Commutation Act.

White Monkey Paw is made from the top two leaves and the bud of new season growth (late March /early April). These delicate leaves are gently and gingerly steamed and dried so the end result is an exquisite hand-made green tea. You will see that the leaves still have the "hairy down" on them which indicates that these leaves were plucked very early in the morning and within the first two weeks of the new season of growth. When you infuse these teas you will witness the delicate two leaves and a bud uncurl in your cup almost coming back to life! The dry leaf appearance of these teas is tending white and said to resemble a monkey paw. • Light liquoring with excellent green tea flavor
Every now and then one comes across a tea that is quite unique. This is one of these teas. After the first 3 weeks of the new season, the tea used to produce the silver balls grows (but this special tea only grows until May 10th). Over the years special bushes which have a higher than usual incidence of mottled and "white" leaves have been cloned and planted in one location of the tea estate. The leaves of these bushes grow longer more quickly and are covered with hairy white down giving them a silver appearance. The top two leaves and the bud are plucked. The long leaves are hand rolled lengthwise, one by one! A group of them are tied together, the leaves in the middle of the cluster are clipped short (being careful to leave the outer leaves full length) and then the long outer leaves and molded over the short clipped middle leaves into the shape of a ball. The silver balls are then wrapped in a individual mesh covering and steamed to halt any possible fermentation. The mesh is then removed and the silver balls are re-wrapped in special paper so when they dry the beautiful round shape is maintained. When the tea is infused the silver ball "blooms," so to speak, and final shape is that of a chrysanthemum flower.

Green tea, above all others has a very delicate flavor which is easily marred by the impurities in the water used for brewing it. In the Tang and Ching dynasties water filters were not available and teas were often as expensive as gold. In those days the wealthy tea drinker would bring water from afar (sometimes up to 1000 miles away). Lu Yu, the Tea God, declared, "Mountain spring water is best, river water is next best, well water is the poorest."

There are many legends of the origin of tea. One such legend says that the founder of the Zen Buddhism cult, Saint Bodhidharma, once fell asleep during his meditation. When he awoke, he was so embarrassed that he decided to cut off his eye lids as an act of penance. "Cast to the ground, the severed eye lids grew into a tea plant which, when brewed, could banish sleep."

Legend has it that the name Gunpowder was given by an young English clerk who thought the tiny rolled green balls looked like gunpowder. The tea leaves are specially selected for quality, size and style. They are then rolled into very small tight nuggets. Gunpowder tea keeps a lot longer than other green teas and is favored because of this characteristic. Chinese exporters recommend gunpowder for iced tea flavored with lemon and sugar. Gunpowder tea is also very popular in Morocco where the leaves are boiled and mint and sugar are added.

Pinhead Gunpowder Pingshui tea comes from the province of Zhejiang across Hangzhou Bay from Shanghai. It was in Hangzhou that Mao Tse Tung (China's first leader on modern times) first met with Richard Nixon (President of the United States). This 1973 meeting which included gunpowder tea was the beginning of normalized relations between China and the United States.

The leaves for Pinhead Gunpowder are only plucked during April and May when the quality of the green leaf is at it's highest. The leaves are steamed and tightly rolled in a time honored process. When preparing this tea, part of the ritual is to take two pinches of Pinhead Gunpowder and drop them into a porcelain cup so you hear the jingle and tinkle of the leaves hitting the sides. Boiling water causes them to open up like flowers and sink slowly to the bottom in graceful patterns which add a dimension of visual pleasure to tea drinking. This gunpowder produces a reasonably strong dark-green brew with a memorable fragrance, a slightly bitter but not unpleasant flavor and a long lasting finish. Gunpowder is more dense than other teas so if you are making a teapot full you only require one or two teaspoons for a teapot.

Chinese researchers have found that gunpowder tea is high in fluoride and can be used to help support cavities. They say that a human body requires 1-2 milligrams of fluoride a day. Ten grams of gunpowder tea (enough to make 3 cups of strong tea) can supply this amount.

This tea is a particularly good jasmine, hence the moniker Gold Dragon, (gold means wealth, prosperity, money and dragon means long life and strength). The jasmine tree comes into bloom only during May and June. The blossom only lasts for about 12 hours and only comes out at night after the sun goes down. About half way through the night the fragrance is at its peak and it is at this time the blossoms need to be picked and layer into the tea. By the morning most of the fragrance has disappeared from the blossom. But if the tea maker has done his job correctly, this heavenly scent has been transferred to the tea and captured in time. This process is carried out on 5 successive evenings to impart the superior flavor of specially selected tea and jasmine flowers.

In China during the Sung Dynasty (960 to 1127), tea drinking rose to an art form. The harvesting of tea became closely regulated. Drum and cymbal signals were used to coordinate the tea pluckers during chilly dark pre-dawn hours. The tea pickers (always young virgins) received special training and even wore identification labels on the clothing so that tea thieves could be readily identified if they entered the estates. The girls were required to keep finger nails at a precise length, since nails, never the finger, were used to pluck the highest quality tea leaves. The fresh picked leaves were graded into classes and processed. The choice grade was delivered as tribute tea for the Emperor, while the rest was traded and sold by the regional government. A handful of tea of the choicest grade could be worth as much as 3 ounces of gold - virtually a lifetime of earnings for the common man.

The Chinese name for Gunpowder Tea is Siaou Chu, which literally means large leaf. Rolling the leaf has two effect on quality of the tea. This tea is a top quality Green Tea (Pearl River signifies very important, master quality, cleanliness and good health). This superior quality Pearl River is exceptionally well graded with even curly leaf. Interestingly only the best leaves are able to achieve this particular curl and to sort these leaves from the rest of the leaf production the estate hand sorts! This literally means that the tea is spread out on a table and the leaves are picked out, one by one! The best tea is made during March and April when the tea bush re-emerges from its winter dormancy and expends all its spring energy into growing the new shoots. The estate employs fine plucking techniques which is to say that only the top two leaves and the new bud is taken. Further, the plucking only takes place in the pre-dawn, when the leaf is covered with a misty dew which improves the taste and imparts a fullness to the tea character.

The quality of the water and it's affects on tea are legendary. Lu Yu, the father of Chinese tea (Cha'CHing or Book of Tea written in 780 AD), stated that water was of utmost importance. On a trip on the Yangtze River as a guest of a dignitary, Lu Yu asked have tea made with water drawn from the center of the river which was the cleanest and tastiest. After taking a sip Lu Yu said in disgust that the water was from the river bank. The man responsible denied this, upon which Lu Yu retasted the tea and declared that perhaps the man was correct but the water was inferior. The man then acknowledged that after he had drawn the water from the center of the river, some had spilled on the return trip to shore and the jar was topped up with water from midstream. Just before the dignitary had the man put to death for such great embarrassment, the man declared "Master Lu. you are clearly immortal."

The two peaks of Mt. Tianmu are famous for its scenery and misty covered slopes. The tea bushes grow in the valleys, where it is misty three quarters of the time (tea cannot grow on the summit because it is too windy). This gives the tea its unmistakable taste and visual appearance. This tea is manufactured under shou-mei principles, those being sun-dried and subjected to a minimum amount of processing so the tea's color and aroma are as close as possible to those of fresh leaves. You can see evidence of this in the leaf appearance, the leaves are virtually whole with many bud sets and slight "hairy" down, indicative of very careful hand rolling and superior hand sorting.

The Ming Dynasty ruled China between 1368 and 1644, almost 300 years. Under its rule a very important institution, The Horse and Tea Bureau, played a vital role in the economy. The demand for tea became so great it ranked as one of the empires most valuable commodities. The Bureau became responsible for bartering tea for horses. They created incentives for the farmers to grow tea by reducing the tax to 1% (the farmers would allocate 1% of their crop to the state). It was during the Ming Dynasty that tea was first introduced to Europe.
