Medicinal Usage

Parsley contains up to 22 percent protein. It is high in vitamin A, vitamin C, fiber, calcium, iron, magnesium, potassium, and riboflavin, and contains some niacin, thiamin, and phosphorus.

The seeds and leaves have been used for health benefits to help support indigestion, jaundice, menstrual problems, gall stones, coughs, asthma, and dropsy. They are diuretic, stomachic, carminative, depurative, expectorant, and emmenogogic. The leaves can be chewed as a breath freshener.

The essential oil from the seeds contains apiole, myristicin, and alpha-pinene among other substances. A fixed oil in the seed is comprised mainly of petroselinic acid. The leaf oil contains bergapten and can be used in oriental perfumes and men's colognes. Parsley preparations are reported to be useful, laxative, and tonic on uterine muscles.

General Herb Information

Perhaps no other herb is as familiar in its fresh form as parsley. What plate of restaurant food is served without a sprig tucked to the side of the main course? At meal's end it is often the only thing left on the plate, even though it may well have been the most nutritious part of the meal.

Parsley is native to Europe and western Asia. It is a biennial growing to six to eight inches the first year, then reaching three feet in height when in flower. The smooth, bright green leaves are deeply divided. Tiny yellowish-green flowers are borne on loose compound umbels. There are numerous cultivated varieties. P. crispum var. crispum has curled and crisped leaves. Its cultivar, 'Perfection', produces stiff erect stems, making a clean bunch, easy to harvest. 'Triple-curled' has tightly crisped dark green leaves, looking from a distance like broccoli heads. P. crispum var. neapolitanum Italian parsley, has flat leaves similar to celery. P. crispum var. tuberosum, turnip root parsley or Hamburg parsley, produces thick parsnip-like taproots and has tall fern-like leaves. Parsley leaves stay green during winter.

The key to growing parsley from seed is patience. Seeds may take three to six weeks to germinate. Plant anytime from spring to autumn; but for an early crop, sow parsley one-fourth inch deep at the same time peas are sown. A frost or two won't deter young seedlings. Parsley can be sown indoors, but seedlings transplant with difficulty. Direct sown plantings are best. Treat parsley as an annual, planting anew each year. The second-year leaves tend to be tough and bitter. Once germinated, thin seedlings to stand at six- to eight-inch spacings. Six pounds of seed will sow an acre.

A fertile, moist, sandy loam with 6 to 8 pH is best. Good drainage is essential, especially if you intend plants to survive a winter so you can collect seeds the following year. A friable, double-dug bed serves parsley culture well.

Harvest the leaves once they reach a height of about eight inches and at any time thereafter. Hamburg roots are dug in the fall of the first year or the following spring. They can be stored in a cellar in moist sand. Italian parsley is grown for dried leaf or "parsley flakes?" Leaves must be dried quickly under forced heat to retain a rich green color.

What better herb for culinary use than parsley? Add to salads, tomato dishes, baked potatoes, fish, meat, peas, egg dishes and branch out into parsley butter and parsley sauces. The list is endless. The roots of Hamburg parsley can be grated in salads or soup stocks and cooked like parsnips. Harvest roots in early spring, slice very thin, and sauté in butter with the first fresh mint leaves of the season - delicious!

Description: Parsley is a biennial herb (up to 1 m) with a fleshy root and finely divided, compound and curly leaves in a basal rosette. Greenish yellow flowers and small dry fruits are formed on erect double umbels in the second growing season. The wild form of common parsley, and the cultivated Italian parsley (var. neapolitanum) have flat, non-curly leaves. Turnip-rooted parsley is a cultivar with edible roots.

Origin: Europe and western Asia. It is cultivated as a garnish, salad ingredient, spice and to a limited extent as a useful plant in many parts of the world.

Parts Used: Mainly the leaves (Petroselini herba) and roots (Petroselini radix), less commonly the fruits Petroselini fructus).

Therapeutic Category: Diuretic.

Preparation and Dosage: A daily dose of up to 6 g of the dry leaf or root is recommended. Tea made from 2 g herb in a cup of boiling water can be taken three times per day. Parsley leaf, root or fruits (or more often extracts) are commonly included in diuretic, laxative and "slimming" teas and in other diuretic preparations.

Active Ingredients: Parsley contains an essential oil (fruits: 2-6%; herb: 0.5%) which has very high levels of the phenylpropanoids apiol, myristicin or allyltetramethoxybenzol, Furthermore, biologically active flavonoids (including apiin) and traces of furanocoumarins (e.g. bergapten, oxypeucedanin, psoralen).

Health Effects: Myristin and apiol have a terminal methylene group that is chemically highly reactive. They can bond to proteins or DNA. The diuretic activity is ascribed to the irritant and stimulant effects of the phenylpropanoids and flavonoids on the kidneys. Pure apiol is abortifacient in high doses. Myristicin is the stimulant and hallucinogenic principle present in nutmeg oil (Myristica fragrans).

The leaves, seeds, fruit, and root of the parsley plant are all used for its health properties. The root has a sweet, bland flavor, while the leaves are a bit spicy. The lungs, stomach, bladder, and liver are the systems of the body that most benefit from this herb. Specifically, parsley has a diuretic, carminative, aperient, antispasmodic, antiseptic, expectorant, and sedative effect on the body. The seeds, in particular, have an emmnenagogue property not found elsewhere in the plant. Parsley is used primarily for urinary infections and for other disorders related to the urinary tract.

Where the biochemical composition is concerned, parsley conatins a volatile oil, apiin, bergapten, isoimperatorin, mucilage in the root, and sugar. The seeds are stronger in essential oil and include apiole, myristicin, pinene and other terpenes, flavone glycosides, furanocumarm, fatty oil, petroselinic acid. Finally, the leaves are similar but weaker in the above constituents.

The leaves and root can be used to help support urinary tract health concerns, with the root particularly helping to dissolve and expel stones and gravel. All parts are good for digestive weakness and bronchial and lung congestion. The seeds are particularly beneficial for rheumatic complaints.

A good diuretic formula useful for helping to dissolve and help reduce urinary stones is equal parts parsley root, gravel root, half part each marshmallow root and ginger.

The fresh herb is a rich source of vitamin C. Health-wise,Parsley has three main areas of usage. Firstly, it is an effective diuretic, helping the body get rid of excess water. Parsley with its deep green, frilled or curly leaves, is one of the best-known and most widely used herbs, as much for garnishing as for cooking. Neapolitan parsley whose flat leaves are reminiscent of cilantro, is less decorative, has a sharper flavor, and is easier to grow.

History

A native of the eastern Mediterranean region, parsley was first recorded in a Greek herbal as long ago as the third century BC. It was used in ancient Rome in cooking and for ceremonial purposes.

Characteristics

The plant grows to a height of up to 18 inches, with a spread of 10 inches. The stems, which are also aromatic, are green and supple, the leaves curled or flat. The flowers, which appear in the plant's second year, are yellow-green.

Growing Tips

Outdoors, seed is best sown in late spring, summer, and earlyfall in warm soil where it is to grow. Soaking the seed in lukewarm water speeds germination, while pouring boiling water along the seed drill both warms the soil and provides the necessary moisture. In winter, the plants should be protected by cloches or dug up and potted for overwintering indoors.

How to Use

Parsley has its culinary uses in nearly every category of food, in preparing soups, sauces, in marinades, and with meat, poultry, fish, and vegetables. Often a sprig of parsley is all that is needed to present a dish attractively.

Parsley was prescribed for menstrual problems, urinary infections, joint pain, asthma, coughs, jaundice, dropsy and eye complaints. It was also used to help stimulate appetite, and to encourage milk flow in nursing mothers. Chewed raw, the leaves were used as a breath-freshener, especially after eating garlic. As a poultice, they were applied to cuts, sprains, insect bites and swellings. Culpeper said that "the distilled water is a familiar supplement with nurses to give children when troubled with wind in the stomach or belly...it is also greatly useful to grown persons." The herb should not be taken during pregnancy.

Culinary Usage

Parsley leaves, freshly picked or dried, were added to sauces, salads, soups, pickles, pottages, and many other dishes. They were also used as a garnish. The roots were also grated raw, or boiled as a vegetable.

Miscellaneous

Possibly native to south-east Europe and the eastern Mediterranean, parsley was held sacred by the ancient Greeks and included in the wreathes used to crown victors of the Isthmian Games. Both the Greeks and the Romans used the herb in funeral rites and to decorate their graves. Indeed, it was commonly said of the dead: "He has need now of nothing but a little parsley". The herb was also associated with the devil, who was reputed to take a large proportion of the sown seeds, thereby accounting for their slow and erratic germination. Indeed, country folk claimed that only the wicked could grow parsley; and those that gave it away, or transplanted it, could expect misfortune. It was also said that when parsley grew well in a garden, it was the woman of the house who was the dominant partner. The herb's botanical name Petroselinum is derived from the Greek for rock-celery. It was listed by Aelfric. The stems yield a green dye.

Fresh parsley is full of vitamin C and a natural cleanser. When it is applied in a face pack and most particularly when used in combination with other strong green herbs, such as mint, nettle, dandelion, or comfrey, it has a strongly tonic effect which stimulates the circulation to release impurities and improve a sallow or blotched complexion. An application of the crushed leaves or their extracted juices reduces thread veins and broken or dilated veins and bruises, while skin with open pores will benefit from an astringent parsley infusion or from cleansers and conditioners made with an infusion.

Parsley roots have for centuries been regarded as an aperitive, diuretic, stimulant and diaphoretic; it seems to act particularly on the urinary system, the skin and obstructions.

The essential oil of Parsley has been used in a dose of 1-2 drops in blennorrhagia. One doctor administered the juice in white wine and in this way supported blennorrhea, leucorrhea and congestion of the adbominal viscera.

Parsley juice can be used to help support seminal discharges when it is used in a dose of 50 to 100 grams a day. Tournefort said he had seen Parsley juice administered as an anti-periodic in a dose of 100 to 180 grams.

This common garnish for the dinner plate is a native of the Mediterranean region and a biennial herb. Commission E evaluated the root and above-ground body of the plant for health qualities.

Potential Health Benefits

The commission recommends using parsley for flushing out the urinary tract and for the reduction and support of kidney stones. Foildore additionally credits parsley with increasing menstrual flow and inducing abortion. In Europe, parsley tea is favored for its diuretic effect, and as a means of dealing with high blood pressure - a use not specifically endorsed by the commission. The high chlorophyll content in parsley accounts for its value as a breath fteshener.

Scientific Evidence

The active chemicals in parsley include apiol and myristicin, which account for its diuretic effect and have mild laxative power. In his book Tyler's Honest Herbal, herbalist Varro E. Tyler, Ph.D., comments: "Both apiol and myristicin are uterine stimulants, accounting for the use of parsley volatile oil as an emmenagogue [promoting menstruation] and for its misuse as an abortifacient [promoting abortion]."

A 1979 study in the Journal of Chinese Medicine suggests that parsley may help support healthy blood pressure levels, although this use hasn't been widely studied.

How to Use the Herb

Commission E specifies 6 grams of dried root or herb, taken with plenty of water. Other sources offer additional ways of using parsley medicinally.

The PDR Family Guide to Natural Medicines and Healing Therapies recommends parsley tea 2 to 3 times per day, using tea bags of crushed leaf and root.

Health writer Michael Castleman suggests 1/2 - 1 teaspoonful of liquid extract as many as 3 times per day for use as a laxative and diuretic.
