The Dimbula district of Sri Lanka peaks in quality during the Northeast monsoons during January and February. As the northeast monsoon winds blow across the Bay of Bengal they become warmer and pick-up moisture during the 1500 mile journey to Sri Lanka. As the warm moist air rises into the cool mountain air condensation occurs and there is heavy rainfall on the eastern side of the island. The Western side gets very little rain but lots of sunshine. Dimbula is on the west side of the island and consequently being in the rain shadow the quality improves dramatically - cool, dry and bright sunshine.

Strathspey is classed as a high grown estate. In Sri Lanka they class a high grown as an estate where the mean altitude is between 4200 - 9000 feet above sea level. High growns provide superior flavor and the best quality because: cooler temperatures, generally better soil , more sunshine, generally slightly less rainfall - These cause the bush to grow more slowly and the goodness and flavor is concentrated in the new shoots. Compare this to the medium growns which are tending flat with no life to the low growns which are thick dull and stewy, verging on being unpleasant and harsh.

  • Tea was first planted in Sri Lanka by James Taylor in 1867 at an estate called Loolecondra.
  • 60% of the green leaf supplied to the tea factories comes from small holders (individually held farms).

This tea blend was specially created taking into consideration the nuances of the various waters across Canada. To be considered as "the toast of Canada" from a tea perspective, the tea had to be able to "shine" in any water. For this reason, a broad range of origin teas were used. More than 35 various teas were tasted using the water sent to us from various parts of the country. The tasting session extended more then 2 days until the right blend was achieved which combined the best teas a synergistic relation. A few additional refinements were undertaken the final result was an outstanding tea, the best in Canada, if not North America or the world.

The Assam component (2nd flush, June Production) gives a thick malty and full bodied character. The Kenyan component gives a floral-like cup and coppery infusion whereas the South Indian component gives superb fruity and sprightly flavor with a lovely finish. From Sri Lanka (formerly called Ceylon) we used a January production Dimbula which gives an airy piquant flavor that opens the blend. Lastly, to draw everything together we added some Keemun which gives a burgundy depth with light oaky notes.

Canada has a history of consuming the best teas in the world. During the 1960's and 1970's, on a world scale, it was Canadian and Irish tea companies that paid the most for the teas which formed the basis of the blends that were readily available in their respective countries. Sadly, in Canada and to a lesser extent in Ireland, as the tea blenders became older and started retiring, the large tea companies did not see the need to maintain the quality. There were competitive pressures in the market place and these had to be met. Consequently, the overall tea quality in Canada declined over the 1980's and 1990's. Luckily, concurrent with the dramatic quality decline there was a tea trading company in existence at the time, named Hayter and Scandrett that trained it's personnel exceedingly well in the fine points of tasting and recognizing quality teas. These personnel carried the blending secrets and knowledge of fine quality tea that was later transformed into the best tea blend in Canada, resurrecting Canada's long history to drinking and enjoying the world's best teas.

A tea tasters secret recipe for a pick-me-up on a cold day - make this tea hot as above, pour into a large mug and add 4-5 slices of lemon and 2 heaping teaspoons of sugar - sit back and enjoy a tasty energy boost. To make a special iced tea - after you have added the lemon and sugar, pour this over ice in a tall glass - terrific!

It was a tragedy to connoisseurs when Twining's bought Jackson's of Piccadilly and dropped the Russian Caravan line. This Terravita is really not a substitute, an okay sachet drinkable but not in the same calibre as Jackson's.

The practice of employing poetic or picturesque names to tea varieties is "steeped" in history. Merchants named their blends to distinguish them from competing blends and to create a brand awareness, (18th century marketing concepts that hold true today). They did this by combining special teas from various regions of the world to create "classic" cups of tea. The originality of each blend is a result of a careful alchemy - the tea master attempting to turn green into gold.   • Darjeeling - a second flush high grown Darjeeling from the estate Soom with mysterious and magical muscatel character.
  • Dimbula Ceylon - a February production Dimbula (February is when the Dimbula region peaks in quality) from estate Hatton displaying the coppery depth and flavor of an exceptional Ceylon.
This "menage a trois" has personality and character, yet does not overwhelm. Dragonmoon has the strength and regal character of the dragon yet matched with the luminous quality of an early evening full moon (as seen in the color on the resulting brew). Calcutta is the centre of the Indian tea trade and during it's heyday it was the centre of the British influence in India. In Calcutta the sights and flavors that abound are many and varied. You will look one way and say, "wow, that is the strangest thing I have ever seen," only to look another way and say, "No, that is the strangest."

The Calcutta Swimming Club and the Tollygung Golf Club both serve teas which have local character. Our blend takes these profiles into account. We detected notes of aromatic citrus in the garden of the Swimming Club (hence the Earl Grey note). The tea served was sweetened with mango blossom honey (hence the sweet honey notes). At the Tollygung they tended towards spice characters such as Ginger and Vanilla. Rounding the blend out and drawing all the distinct components together was full flavored Assam - the richest tea in the world.

Tea became the fashionable beverage in French society toward the end of the reign of Louis XIV. Members of the upper class would gather to debate issues of the day and drink tea. Princess of Palatine remarked in 1706 that tea could make one chaste and therefore was better for Catholic priests than for Protestant ministers.

French art romanticized the tea hour in their paintings as artists such as Chardin and Boucher painter teapots into the rich still-life works and portrayed society at festive teas set in exquisitely furnished rooms. They captured voluptuous women taking tea in the intimacy of their boudoirs or languishing at tea tables resplendent with silver and lace. One of the more ambitious teas paintings was Barthelemy's "Le The a l'Anglais" which he painted in 1776. The elaborate work depicts Mozart at the harpsichord performing for the gentry seated at tea tables in the Paris salon of the Prince de Conti.

What really makes French tea unique is the accompaniment of "une patisserie." Careme (1783-1833), a celebrated patisserie chef declared a pastry to be one of the noblest forms of architecture. One of our favorite methods of taking French tea is with a buttery croissant, "pain au chocolat" or "le muffin" accompanied by a fruit confiture.
