We thoroughly scrutinize our decaffeinated teas to ensure that they stand up to North American Quality specifications. All of our decafs are processed using the Co2 Process. The advantage of this decaffeination process is that no chemical solvents can be used to remove the caffeine. Also, using the naturally occurring Co2 in a circulation process which carefully uses high pressure and temperature to extract the caffeine, the origin distinct character of the tea is retained in the cup. There is a slight change in the character of the tea due to the process but the end result is an uncompromising cup of tea with no chemical overtones.

We use a blend of various Ceylon teas for our decaffeinated English Breakfast because we feel these teas give us the character we are looking for, flavory and satisfying tea. Also, we have found that Ceylon tea retains it's character under Co2 decaffeination process much better that other origin teas.

Typically, the quality of tea is judged by hundreds of the tea tasters around the world. On a weekly basis raucous lively auctions are held in various producing countries where world prices are set. Tasters are looking for similar characteristics, so in the matter of a few seconds the value of the tea is established according to supply and demand functions and quality gradients.

Today the habit of tea drinking is inexorably linked to the British despite the fact that the British were fairly late on the tea scene in historical terms. Ironically, the first mention of tea in English literature is a translation of a Dutchman's travels to the east. Tea was first brought to England via Holland on Dutch ships. Per capita, Irish consumption of tea is amongst the highest in the world. The Irish prefer a full bodied cup of tea that if brewed long enough one could almost stand their spoon upright. The strength is achieved by buying the best teas available from seasonal production periods in Assam and Kenya. This means that the Assam teas are from the second flush period during June, and the Kenyas are from February and August growth. 2nd flush Assams give a deep malty astringency and the best make your mouth feel dry they are so astringent. This astringency leads to a malty character that is almost so thick you feel like you could chew it. The seasonal Kenyas have a golden coppery color with an almost floral note that give a complex depth to the tea. Furthermore, you will see that the grade is CTC - cut, torn curled. The green leaf whilst it is being processed passes through a machine the cuts, tears and then curls the leaves into tiny balls. This "mash" ferments very quickly after which firing takes place to "lock-in" the flavor. These tiny tea balls when infused release their full flavor, more so than whole leaf tea. The reason is that there is more surface area on the tiny balls which can infuse as compared to the whole leaf tea. This is how the Irish like their tea!

Regarding the addition of milk, there is the age old argument of when to add the milk to the cup - before you add the tea or after. Milk-firsters argue that adding milk last scalds the milk noticeably and therefore the milk should be warmed slowly with the addition of tea. Milk-lasters argue that adding milk after the tea has been poured is the only way of judging the proper amount of milk to add by watching the color of the tea change. Non-users of milk regard the whole issue as silly.

West of London is the stately Windsor Castle, a home of the reigning monarch of the United Kingdom. The castle is situated on a hill overlooking the countryside and dominating the skyline of the City of Windsor. When the Queen (or King) is resident at the castle, the royal standard is flown from the masthead of the main tower. In 1993, there was a disastrous fire at Windsor Castle, destroying generations of royal collections, paintings and significant parts of the historic monument. When Queen Elizabeth II received the news (whilst visit ing Kenya and staying at Treetops Lodge) that her father King George IV had passed away, preparations immediately got underway for her coronation as the head of state for The British Empire. In the matters of protocol it was important that all details be considered - including the type of tea served. This blend represents the major tea growing regions within the British Empire of the day.

From Sri Lanka (formerly Ceylon): We have used teas from the Nuwara Eliya and Dimbula districts. Both districts are high elevation (above 5000 feet above sea level). These teas are marked with light bright liquors with delicate astringent flavor. The western part of Nuwara Eliyas peaks in quality during February as does Dimbula.

From India: Two district teas are used (Assam and Darjeeling). India was not part of the British Empire in 1952, gaining it's independence in 1948, but Indian teas formed the basis of virtually all English tea blends, so we would have been remiss not to include these in the blend. Top quality Assam tea is keynoted by gutsy and thick liquoring tending malty teas whereas Darjeeling tea is characterized by light liquor with a muscatel like character in the cup. Both districts peak in quality during June, the 2nd flush season.

From Kenya (signifying Britain's interests in East Africa): We have included tea from Tinderet a high grown estate in the Kericho district. Tinderet is characterized by golden coppery liquor and very flavory with a hint of maltiness.

From Egypt (signifying the importance of the Suez Canal to the world and Britain's commitment to this area): We have used Nile Delta camomile. This adds an interesting appearance plus a honey like character that is unique.

The final result is a delicious full flavored orange pekoe style tea with hints of honey and no doubt served with great fanfare and distinction at the coronation of Queen Elizabeth II.

Highlanders guarded their traditions fiercely and were well known for their loyal robust character.

This tea is like a proper Highlander - robust, malty (not unlike a good Scotch) and full of life and vigor. Highlanders liked their tea very strong and insisted on hints of cask oak to remind them of their clan's own special elixir - single malt Scotch. This blend consists of 2nd Flush Assam tea (thick, robust with delicious hints of malt); January production South Indian tea (high mountain grown that has wonderful flavour notes which accentuate the robust Assam; Keemun Panda #1 which has a delicious winy character further enhancing the stout malty character of the blend; and finally a Chingwo County Orange Pekoe which gives the distinct oaky character. This tea is especially delicious with milk which further lends a malty character to the tea and highlights the brightness of the premium tea which has hints of a red color.

A tea tasters secret recipe for a pick-me-up on a typical Highlanders day (cold and bracing) - make this tea hot, pour into a large mug and add 4-5 slices of lemon and 2 heaping teaspoons of sugar - sit back and enjoy a tasty energy boost.
