	The enzyme lactase is specific for lactose, the primary sugar found in dairy products. Lactase is a food grade enzyme obtained by a controlled fermentation of Aspergillus oryzae and is involved in the conversion of lactose to glucose and galactose (two simple sugars that make up the lactose sugar). Whole milk, skim milk, processed cheese, cottage cheese and various other cheeses, yogurt, and other dairy products can be more effectively broken down with the addition of this enzyme.
