It is chemically similar to starch, but structural differences, or how the molecules are put together, makes cellulose undigestible. The human body is unable to produce cellulase, the enzyme that breaks down plant fiber, and because of this, cellulose passes through the digestive system providing no nutritional value. Supplemental cellulase, however, can break down cellulose into simpler sugar units that the body can absorb. Cellulase Unit (CU) is the standard unit used to measure enzymatic activity.
