Lactose Intolerance is a form of allergic indigestion which is much more common in certain non-Caucasian races than in Caucasian. It is due to lack in the intestine of the enzyme known as lactase which is responsible for the digestion of lactose, the sugar in milk. In such individuals the taking of milk is followed by nausea, a sensation of bloating, or distension, in the gut, abdominal pain and diarrhoea. Such disturbances after taking milk may also be due to the individual's being allergic to milk. Treatment is by means of a low-lactose diet. Foodstuffs high in lactose, such as fresh or powdered milk, and milk puddings should be avoided. Most people subject to it can tolerate fermented milk products and the small amounts of milk used in baking and added to margarine and sausages. It is said to occur in up to 80 per cent of non-Caucasian adults but only 5 per cent of Caucasian adults.
