Descriptionn: Maté is an evergreen shrub or tree with bright green, oblong, leathery leaves, small white flowers and spherical red berries.
Origin: South America (Brazil). The tree is grown commercially mainly in Brazil but also in Argentina and Paraguay.
Parts Used: Dried leaves (Mate folium; synon. Herba Ilicis paraguarensis).
Therapeutic Category: Stimulant, diuretic.
Uses and Properties: Maté is used as a diuretic and to overcome mental and physical fatigue. It is considered to be a tonic, and stimulant, and is commonly a natural slimming remedy. Some people simply enjoy maté as a refreshing alternative to tea or coffee. In South America, the traditional way to drink the infusion is to suck it up from a small gourd, through a silver tube (fitted with a strainer at the bottom).
Active Ingredients: The main active component is caffeine, the well-known alkaloidal stimulant in tea and coffee. It occurs in maté at a level of up to 2% of dry weight. Minor alkaloids are theobromine (up to 0.4%) and traces of theophylline. Also present are phenolic substances (12% chlorogenic acid, 4-16% condensed catechols) together with flavonoids, triterpene saponins and 0.3% essential oils.
Pharmacological Effects: The pharmacological activity of caffeine is well known: it binds to adenosine receptors and inhibits phosphodiesterase. These molecular interactions lead to a stimulation of the central nervous system, diuresis, respiration and smooth muscle relaxation. High doses can lead to undesirable side effects such as anxiety, palpitations and sleeplessness.
Notes: Indians in the southeastern USA brew a ceremonial tea (casseena) from leaves of Ilex vomitoria.

Preparation and Dosage: Hot water is poured over about 3 g of dried leaves and allowed to steep briefly before it is strained. As with ordinary tea, even brief boiling will result in an astringent taste because the tannins will also be dissolved. The herb is available in crude form or in a wide range of herbal tea mixtures (kidney and bladder tea, laxative tea, headache tea, and so on).

Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.
