Mint, with its antiseptic, antibacterial, antispasmodic and anti-inflammatory properties, was prescribed for digestive problems, nervous headaches, fevers, colds, flatulence, colic, and other ailments. Inhaled, it was used as a restorative. Gerard said that mint "is marvellous wholesome for the stomach", and "is good against watering eyes, and all manner of breakings out of the head, and against the infirmaries of the fundament [buttocks], it is a sure remedy for children's sore heads." He also said, quoting Pliny, "that it will not suffer milk to cruddle in the stomach." The Romans believed that pennyroyal had the power to drive away fleas.
Culinary Usage
Mint has been used for culinary flavouring since ancient times. Its many uses ranged from garnishing dishes to flavouring drinks, confectionery and sauces.
Miscellaneous
Mint was used by ancient physicians long before the Bible mentioned that the Pharisees collected tithes in mint, dill and cumin. Spearmint was probably introduced into England by the Romans. The mint, or Mentha family, is named after Minthe, a nymph in Greek mythology, who was changed into the herb by Persephone, the jealous wife of Hades. Pliny said that instead of 'mintha', the plant "has begun to be called by a Greek word meaning sweet-scented", adding that it was "agreeable for stuffing cushions, and at country feasts pervades the tables with its aroma." It was also used as a strewing herb, an insect-repellant, and in perfumery. Listed by Aelfric, mint was grown in England in monastic gardens from at least the ninth century. Watermint was one of the three most sacred herbs of the Druids, the others being meadowsweet and vervain.

Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.
