Sage is an evergreen sub-shrub, though its leaves are not necessarily green. Some varieties have gray or gray-green downy leaves, and one has deep purple leaves and exceptionally pretty mauve-blue flowers. The flavor, which has faint overtones of camphor, is very strong in some types. The plant is a native of the Mediterranean region.
History
Sage, which takes its name from the Latin salvere, "to save," has a long history as a medicinal plant. It was much in evidence in Roman times, again for medicinal purposes, but was well established mainly as a culinary herb in medieval England.
Characteristics
The plant can reach a height of 24 inches, with a spread of 18 inches. The stems are woody, and the leaves, elongated ovals, can be 2½ inches long and ¾ inch across. The flowers, which appear in midsummer, are about 1 inch long, borne on long, curving clusters.
Growing Tips
Sage likes a well-drained soil and a sunny position. It can be grown from seed planted in spring, or from tip cuttings taken under cover in summer. The plant tends to become woody and straggly, so should be renewed (by taking cuttings) every few years. Cutting off the stems before flowers form encourages leaf growth.
How to Use
Sage is a popular culinary herb and has an affinity with pork and cheese. It is also traditionally used with onion in stuffings.
The leaves and flowers are used to make astringent infusions for cosmetic use in cleansers and tonics to treat oily and problem skins. It also conditions and colors dark hair.
Medicinally, sage provides us with a readily available antiseptic agent, and its juice has anti-inflammatory and antiseptic properties. Smooth muscle (found in the internal organs) can be effectively relaxed by sage extracts. Sage can be taken to control excessive lactation. Menopausal problems may respond to the estrogen-like stimulation of sage and it has been used to assist fertility and aid digestive problems.
