General Herb Information
Marjoram - Four useful marjorams, Pot Marjoram (Marjorana onites), Wild Marjoram (Origanum vulgare), Sweet Marjoram (M. hortensis) and Showy Marjoram (O. puichellum) are perennials but in coal climates Sweet Marjoram has to be treated as an annual; they may be used as culinary seasonings but Sweet is most fragrant, though Pot, as its name indicates, is widely used. Wild is used mostly for medicinal purposes.
Propagation: By seed; Sweet and Pot are very slow to germinate; Wild and Showy self-sow freely; by root division and by cuttings of hardy varieties in spring.
Nature of Plant: Sweet or Knotted Marjoram is an erect little bush, narrow leaves, white flowers, and green bracts; grown for leaves to be used in the kitchen but is a delightful plant for the fragrant garden; it is not spreading.
Wild Marjoram grows to a leafy bush, about 2 1/2 feet high, with pale pink flowers in loose clusters; its oval leaves are broader than those of other varieties, about 1/8 inch across and 1/2 inch long.
Pot Marjoram is about 1 1/2 feet high and is inclined to sprawl and layer itself, soon forming a beautiful mound; flower clusters and bracts are purplish and suitable for flower arrangements.
Showy Marjoram is most decorative for the garden, with broad yellow-green leaves and pink flower clusters; it forms a round little bush about 16 inches high completely covered with foliage.
Spacing of Mature Plants: Sweet 10 inches, others 15 inches.
Cultural Requirements: All varieties should be planted in light, medium rich, chalky soil, average dry in full sun. Sweet Marjoram seedlings require shade until well started; since all varieties are slow growing, they require frequent weeding and cultivation.
Uses
Leaf: (Culinary) In vinegar, soup, dressing, vegetable cocktail, meat pie, roast lamb, cheese, salad, chopped meat, pudding, egg dishes, peas, beans, tomatoes, in white sauce for boiled fish and as a garnish.
Flowering Top: (Industrial) Sweet Marjoram oil is used to scent soap and perfume pomades; Wild Marjoram in tobacco; (Household) in dyes.
Whole Plant: (Medicinal) Sweet Marjoram infusion for nervous headaches, oil to hasten eruptions in measles, in microscopy; Wild Marjoram stimulant, oil on cotton for toothache, in fomentations.

Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.
