According to research out of Israel, 1 gram of lemongrass herb in a cup of hot water contains approximately the same quantity of citral (an aromatic aldehyde) used for in-vitro cancer experiments. Research at BGU in Negev concluded that apoptosis, or programmed cell death, resulted from exposing cancer cells to citral in a petri dish. The findings were made public in the Israeli press and an article was published in Planta Medica, a scientific journal of alternative and herbal medicine.
Yes, you can boil or juice the stalks of the plant for use in cold drinks and smoothies; you can dry them and use them in hot teas; or you can chop them up finely to use in stir-frys and soups; or with poultry and fish; or in Thai and other Asian dishes. You can use the main stalks of the plant and cut and discard the tough outer leaves and the main bulb below. Lemongrass can be quite fibrous and a bit challenging to work with, but well worth the effort. Lemongrass has been used for colds and flus, liver cleansing, indigestion, and skin conditions like acne.
Recently, the focus has been on its anti-cancer properties and its role as a key antioxidant component in Tom Yum Gung, Thailand's favourite and tastiest soup. Research findings suggest that the anticancer benefits if lemongrass in this soup are very significant as Thais have a much lower incidence of digestive tract cancers than any other country.
