Description
There is little doubt that burdock is a big, coarse weed. Yet, avoiding prejudice and accepting the definition that a weed is just a plant in the wrong place, there is equally little doubt that it is a statuesque and ornamental thing which can look superb in the right place. From a rosette of big white-backed leaves a 4 or 5-foot stem appears, leafy to the head of bristly thistle-flowers: These develop in autumn into the 'burrs' of the name and the plant should be cut down before they begin to be shed, for their hooked bristles are adapted to grasp any passing creature - human or otherwise. One good plant uses a dozen square feet of ground so it is not for restricted spaces.
Like Jerusalem artichoke the roots contain inulin, and are used against skin diseases. It can be eaten as a vegetable: Japanese varieties bred for this are now available in the West. In China the seeds are recommended in decoction for influenza and tonsilitis.

Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.
Cautions
Burdock usage can interfere with iron absorption.
