Barley (Hordeum vulgare) is a cereal grass of unknown origin, cultivated since prehistoric times in many parts of the world. It seems to be one of the first grains grown by man as a staple food, Barley may have once been native to Asia, from which nearly all of our cereals come, but grains of it have been found in such diverse places as Egyptian remains from the Pre-Dynastic period (5000 B.C.), Babylonian tombs (300 B.C.), Bronze Age pile-dwellings of the Hallstatt period (1500 B.C. ), and in the Alpine lakes of Austria and Switzerland. The Egyptians, Sumerians, Babylonians and Assyrians knew all about the use of barley for alcoholic beverages, and the oldest known recipe for barley-wine was found in a cruciform inscription on a Babylonian library brick (2800 B.C.). Barley is frequently mentioned in the Books of Moses, and the ancient Greeks trained their athletes on barley-mush because it was considered the mildest of all cereals. Barley was well known in ancient India and was dedicated to Indra who was called He who ripens barley. Hindus use its grains in their religious celebrations, at weddings, childbirths, funerals and other rites. In ancient China, the seed-rich, heavy-bearded barley was a symbol of male potency. Today the use of barley in bread is indicative of poverty and the greatest part of the world's crop is consumed in the form of malted beverages.
