Description
The sweet taste of the stevia leaf is due to the presence of the complex molecule stevioside. This is a glycoside comprised of glucose, sophorose, and steviol. Affecting the spleen and pancreas, stevia is used as a non-caloric sweetener, and for flavoring teas and herbal preparations. Because it is a sugar substitute, it is also preferred by many diabetics.
An important South American herb, stevia is anywhere from 10 to 30 times sweeter than sugar yet it has only 1 calorie per ten leaves. The sweetness of the extract in which various forms of stevia are presently sold ranges anywhere from 100 to 300 times that of table sugar. It is the ideal noncaloric sweetener; unlike with saccharine and other chemical sweeteners, one need not be concerned about its having any carcinogenic properties. It has a long history of use in South America in the treatment of diabetes, and some studies claim that it reduces blood glucose levels. Above all, as an herbal noncaloric sweetener of choice, the extract can be used in cooking and as a sweetener of herbal extracts and teas.
