Description: A sparse, erect annual (up to 0.5 m) bearing variable leaves on slender stalks. The basal leaves are more or less round and undivided, while the upper ones become increasingly more divided. Numerous small white flowers are borne in a typical umbel, and are followed by small greyish green fruits (about 2 mm long).
Origin: Eastern Mediterranean (probably mainly Greece and Egypt) and western Asia; cultivated in many parts of the world.
Parts Used: Ripe, dried fruits (Anisi fructus) and the essential oil, distilled from the ripe fruits (Anisi aetheroleum).
Therapeutic Category: Expectorant, carminative.
Uses and Properties: The fruit and the oil are a traditional remedy for catarrh of the respiratory tract (colds and flu, cough, bronchitis) and also for dyspeptic complaints (indigestion, flatulence, colic). At high doses, the oil is antiseptic and antispasmodic, and has been used as a stimulating liniment and against ectoparasites. Many cough remedies and other medicinal products contain aniseed extract or aniseed oil, not only for its medicinal properties (antitussive, expectorant) but also to improve the flavour and taste.
Preparation and Dosage: A tea is prepared from 3 g of ripe fruits, crushed immediately before use. The daily dose should not exceed 5 g of fruit, or 0.3 g of oil.
Active Ingredients: The fruit yields up to 5 essential oil, in which trans-anethole is the dominant compound (up to 90%), and also responsible for the taste and smell. Minor constituents of the oil include estragole (= methylchavicol; up to 4%), anise ketone, anisaldehyde and anisic acid. Oil stored at room temperature and exposed to light may produce small amounts of 4,4'-dimethoxystilbene, an oestrogen.
Pharmacological Effects: Anethole has documented expectorant, antispasmodic and antimicrobial activities. The carminative effect is less pronounced than with other oils (caraway, fennel). Distinct expectorant activity is linked to the ability of anethole to stimulate ciliary movement of the bronchial epithelium.
Notes: Anise is a popular spice and is easily recognised by its distinctive flavour in food and alcohol drinks (e.g. absinthe, anis, anisette, pernod, pastis and sambuca).

Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.
