All right, it tastes dreadful, but it's useful. The humble yeast is a single-cell organism - a fungus - that grows on starchy, sugary substances such as the grains used in baking and in brewing beer. Commission E studied brewer's yeast, a by-product of beer-making.
Potential Health Benefits
Commission E endorsed brewer's yeast to treat diarrhea, to fight chronic acne, and to restore lost appetite. North American researchers say the chromium in brewer's yeast helps ease symptoms of diabetes and raise levels of "good" HDL cholesterol, but Commission E didn't cite such far-ranging uses. Additionally, brewer's yeast is high in protein, which accounts for half its weight, so it's a good nutritional supplement for some people. Its high vitamin B12 content makes brewer's yeast a useful supplement for vegetarians.
Scientific Evidence
Abundant B vitamins and a broad range of minerals make brewer's yeast a useful ingredient in a prevention-minded diet or as a therapeutic agent. Brewer's yeast knocks out the nasty E. coli bacteria that cause diarrhea. Commission E reports that brewer's yeast reduced toxins from vibrie cholerae by 40 percent. "In animal studies," the commission reports, "the secretory immunoglobulin was increased in the gastrointestinal tract after oral intake of brewer's yeast." That's a good thing - it helps restore the appetite.
