why do fresh fruit contains more vitamin c than can food?

Fruit is subjected to heat during the canning process and this results in lower levels of vitamin C. Temperatures may fluctuate during the storage process as well. A fresh apricot can test as high as 4 times the level of vitamin C as compared to its canned counterpart. Also, enamel-lined cans have been shown to have lower levels of vitamin C compared with plain tin cans due to residual oxygen and vitamin C reacting with the tin; the trade-off, of course, is that the enamel protects the fruit from unsafe levels of aluminum contamination. Oxygen and light are the two major culprits where canned fruit juices are concerned: different materials have different levels of oxygen and light retention (cardboard, glass, etc.), and the fact that there may be added preservatives extending the shelf life of a given canned fruit product can extend the period of gradual vitamin C loss. All other factors being equal (growing conditions, climate, fruit quality, etc.) fresh is always better.
Directions
Stir 1/4 of a teaspoon into a glass of water and consume 3 times daily, with meals.
