Beet Beta [White Beet (Beta vularis); Red Beet (Beta hortensis)]
Medicinal Usage
According to Culpeper, the juice of the white beet "doth much loosen the belly, and is of a cleansing, digestive quality, and provoketh urine." It was also recommended for headaches and giddiness. The red beet was said to "stay the bloody flux, women's courses and to help yellow jaundice."
Culinary Usage
The leaves of white beet were used as spinach, added to porrays (a thick vegetable soup), and for flavouring. The roots, rich in sugar, were also a valuable food.
Miscellaneous
Beets have been cultivated in England since at least Anglo-Saxon times. In medieval times the tops of white beet were cut back to the root to encourage more leaves to grow.
