Medicinal Usage
The root is high in potassium and vitamin C, and contains appreciable amounts of calcium, phosphorus, iron, and vitamin B.
The root will stimulate appetite and aid digestion. It is laxative, diaphoretic, strongly diuretic, rubefacient, and antiseptic. If applied externally, it will give some people a rash with blisters. A cataplasm has been used to break up chest colds and to relieve rheumatic muscle pain. One teaspoon of the root in a glass of water with a little honey can be used as a gargle for sore throat.
The root contains an essential oil, almost identical to mustard oil, plus asparagine and sinigrin. Mustard oil has antibacterial and antifungal properties.
General Herb Information
Horseradish is a deep-rooted, robust perennial native to southeast Europe and naturalized in North America. In bloom it may reach a height of five feet. The dock-like lower leaves have wavy scalloped edges and may be two feet long and nine inches wide. Sometimes the leaves are divided into jagged linear segments. As the leaves progress up the flower stalk they become miniaturized and scarcely reconizable as horseradish leaves. The flowers are tiny and white, and appear in June. The root stock may be two feet long and two to four inches wide.
Propagate by root cuttings in the spring or fall. The Large tap root will produce numerous lateral rootlets. Take those that are pencil thick and about two to eight inches long, cut them square at the top and slanted at the lower end. Place one foot apart six to twelve inches below the soil's surface. Leaves will soon appear. Plants can be grown from any division of the root, though cuttings from the top crown are best. Horseradish may also be grown from seed, but it is not readily available.
A rampant energetic grower in a deep-dug, rich, moist soil, horseradish likes full sun or partial shade. Keep the soil loose and free of weeds. Dig compost around the roots in autumn. A pH of 6 to 8 is best.
Harvest in the fall of the second year. After that time the roots may become pithy and bitter. Plant anew every year or two, but reserve one spot in the garden for horseradish. Like comfrey, once established it will always be there unless every scrap of root is removed. The fresh roots can be stored in a cellar in moist sand or outside covered by earth that won't freeze in winter as you use them.
The young tender spring leaves can be boiled like spinach. The fresh root can be grated and used as a condiment on meats or fish. A horseradish spread can be made by blending a cup of chopped root along with one-fourth cup vinegar, one-fourth cup olive oil, two teaspoons of honey, and two cloves of garlic. When you lift the lid off the blender, don't stick your nose into the cloud of fumes. The combination of sulphur compounds can literally knock you out!
