WILD THYME (Thymus serpyllum) is a creeping shrub of the mint family, native to Europe. Its pungent, lemon-scented, dried tops and leaves have been used since ancient times as a culinary seasoning for soups and meat sauces. In medieval days, thyme mixed with honey was considered a potent remedy for pulmonary diseases.
This species of thyme contains an essential oil which gives it a pleasant penetrating odor; it possesses stimulant and diuretic properties. An antiseptic is extracted from it. Culpeper tells us: "It is under Venus and is excellent for nervous disorders."

Directions
Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.

Elderberry and Thyme Tea
I have tried both the Elderberry and Thyme teas. They were recommended for hayfever. I am a heart patient and the only medication I can take for hayfever doesn't work very well.
The teas are soothing and provide temporary relief from my symptoms.
