Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 tea bag for each cup into the teapot. Pour the boiling water into the pot, cover and let steep for 2-4 minutes. Pour into your cup; add milk and sugar to taste.
Iced tea brewing method: (to make 1 liter/quart): Place 5 tea bags into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea itself. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the serving pitcher straining the tea bags. Add ice and top-up with cold water. Garnish and sweeten to taste.

Publisher's Notes Over recent years the popular approach to medieval history has shifted from the political to the social; and the physical recreation of medieval men and women and their environment by 'living history' groups has prompted a more detailed study of costumes, material culture and ways of life. Many have found accessible sources of information contradictory and confusing, and - given the random and fragmentary survival and publication of documents and a few precious artefacts - this is hardly surprising. Some 19th century historians published mistaken assumptions based upon individual and little-understood survivals and finds. A tendency to underestimate the skills and common sense of our forbears has also created a false image of a gorgeously arrayed nobility presiding over an otherwise 'primitive' society with a 'crude' material culture.
Direct evidence for the appearance of our medieval ancestors may be scanty, but the world it reveals is anything but primitive. GERRY EMBLETON, the well-known historical illustrator and writer, has studied primary sources in several countries over the past 20 years.
