Description
Although it is the seeds of the celery plant that are mainly used as a medicinal herb, both stalk and root of this familiar vegetable have therapeutic properties. Celery root was once used to treat urinary stones, while the stalks are characterized in Eastern medicine as having a bitter-sweet taste, making it a moist, cooling food ideal to balance hot, drying, spicy chili dishes.
The seeds will encourage excretion of uric acid, which is helpful for a number of arthritic conditions, especially gout. They also help lower blood pressure and are a reputed aphrodisiac. The juice extracted from the whole celery plant and roots can be used as a tonic for debilitated conditions and may also help with joint or urinary tract inflammations.
A volatile oil, extracted from the seeds, contains an uterine stimulant also found in parsley seeds, and for this reason large quantities are contraindicated in pregnancy. The stalks are, however, perfectly safe for expectant mothers and can also help stimulate milk flow after the birth.
Celery seed is found in a number of over-the-counter patent remedies for fluid retention and also in preparations for rheumatism and arthritis. The seed can be used in infusions, while juicing the stalks will produce a valuable tonic drink.
