The dried roots of burdock were powered and taken as a blood purifier, to prevent colds and flu and to stimulate perspiration in fevers. During the Middle Ages burdock was used to treat leprosy, eczema, psoriasis, boils and other skin complaints. Fresh leaves were applied externally as a poultice to bruises, ulcers and swellings. Culpeper said that "the seed being drunk in wine forty days together, doth wonderfully help sciatica."
Culinary Usage
The young and tender stems of burdock were eaten in salads, boiled as a vegetable, or candied like angelica. The roots, also cooked and eaten, were an ingredient in "dandelion and burdock" cordials and beers.
Miscellaneous
The hooked burrs, or fruiting heads, catch on to clothes or animal fur, thereby dispersing the seeds. The herb was listed by Aelfric.
