General Herb Information
Parsley - (Petroselinum hortense).
Propagation: By seed, very slow and uncertain germination.
Nature of Plant: There is a curly and a fern-leaved variety, both pleasing in garden, the vivid green foliage of the curly variety being particularly beautiful as an edging.
Spacing of Mature Plants: 6 inches.
Cultural Requirements: Medium rich, deeply dug, average soil in partial shade; not satisfactorily transplanted; germination period may be shortened by soaking seeds for 24 hours before planting and sowing on the surface and tamping them firmly with a flat board; thin by pinching out unwanted seedlings (which may be used for garnish) and keep leaves clipped for thick growth; flower stalks appear in spring of second season and should be cut off to preserve plants; enriched soil can then be spread around plants and dug in; most growers prefer to sow seed in autumn as resulting plants are less liable to winterkill; fern-leaved variety is less liable to winterkill than curly.
Uses
Leaf: (Culinary) In soup, stew, creamed vegetables, salad, over eggs, chicken stock, in melted butter for potatoes; (Medicinal) In treatment of wounds.
Whole Herb: (Industrial) For coloring wines and in sage cheese, planted between rows of onions and of carrots to counteract odor and lessen the attraction of attacking flies; (household) oil to destroy vermin.
Seed: (Medicinal) To dispel fever.
Root: (Medicinal) For kidney troubles, mild laxative.
