Description
Stevia is sugarless, calorie free and a plaque retardant that is reportedly suitable for diabetics as it does not impact blood sugar levels. Stevia can replace sugar in the diet and can be used as a flavour enhancer. It helps bring out the true flavours in cereals, juices, berries, ice cream, candies, chewing gum, toothpaste and mouthwash in addition to its normal sweetening activity. It can also be used topically as a mask ingredient.
Stevia Rebaudiana is a small plant native to Paraguay and Brazil It was discovered in 1887 by a South American scientist named Antonio Bertoni who learned of the herb from the Guarani Paraguayan Indians Stevia was known locally as Caa'-ehe or Kaa'-he-e which means "sweet herb" or "honeyleaf."
Two french chemists named Bridel and Lavieille began to unravel the secret of Stevia in 1931 with exploratory extraction on Stevia Rebaudiana leaves. Their research yielded a pure, white crystalline compound they named "stevioside." They found this substance to be 100-300 times sweeter than table sugar and without toxic effects in laboratory animals.
In 1971 a Chinese researcher, Dr. Tei-fu-chen visited Paraguay where he became so interested in Stevia that he applied for residency status in both Paraguay and Brazil. The non-chemical method of extraction (alcohol) recorded in herbal manuscripts of Chinese emperors became the standard method of extraction for Stevia. It removed the undesirable green color and bitter after taste that is found in stevia leaves.
Dozens of studies have shown Stevia to be a safe supplement for the human diet, and it is currently used extensively throughout the world in a variety of ways.

Stevia Leaf has been used for centuries as a natural, sugar-free sweetener. Stevia Leaf has also been used in conjunction with its anti-bacterial properties, and is believed by some to be of help in preventing diabetes.
Stevia is a safe, all-natural alternative to artificial sweeteners and refined sugar in the diet. It has been used for centuries by native Indians in Paraguay, and consumed safely in massive quantities for the past 20 years. The Japanese use it in sugar-free chewing gums and diet sodas. It has undergone dozens of tests worldwide and was found to be free of toxins. Stevia has many uses besides its traditional use as a sweetener. It has also been used as a medicine, a cosmetic ingredient, as a pickling agent, and as a dentifrice. As a "flavor enhancer," Stevia helps to bring out the true flavors in cereals, breads, juices, berries, sherbets, candies, yogurt, ice cream, chewing gum, pickles, toothpaste and mouthwash.
Various glycosides, particularly stevoside, give stevia its sweetness. Stevoside is between 100 and 200 times sweeter than sugar. Early reports suggested that stevia might reduce blood sugar (and therefore potentially help with diabetes), although this has not been confirmed in all reports. Extensive reviews of human and animal data indicate stevia to be safe. Stevia accounts for nearly 40% of the sweetener market in Japan and is commonly used in various parts of South America.
