Beta carotene is one of two primary isomers of the orange, photosynthetic pigment known as carotene (the other being alpha carotene). The beta form of carotene is the more common form and is found in a variety of yellow, green and orange fruits and vegtables. While these fruits and vegetables are brighlty colored to proliferate pollination and seed distribution for the good of the species, there are some compelling health benefits that these foods possess. Beta carotene has demonstrated powerful antioxidant behavior in laboratory research and has also been the focus of much cancer research. Beta carotene supplements have been prescribed for night blindness and other eye problems (cataracts, for example), skin disorders, enhanced immune function, HIV, and heart disease. Carrots, sweet potatoes, squash, broccoli, and dark, leafy greens are all excellent sources of beta carotene.

Prolonged use of doses of greater than 25,000 IU Vitamin A may lead to bone and joint pain, hyperostosis, hair loss and anorexia. Pregnant and lactating women should consult their physican before taking high doses of Vitamin A and D.
