Stevia rebaudiana is a small shrub native to Paraguay and Brazil. A South American scientist named Antonio Bertoni, who learned of the herb from the Gaurani Paraguayan Indians, first documented Stevia's use in 1887. Since that time scientists have perfected the alcohol extraction of a white crystalline compound called stevioside. Stevioside is the component of stevia that has been attributed to the unique qualities of this traditional herbal product.
