Stevia rebaudiana is a small shrub native to Paraguay and Brazil. A South American scientist named Antonio Bertoni, who learned of the herb from the Gaurani Paraguayan Indians, first documented Stevia's use in 1887. Since that time scientists have perfected the alcohol extraction of a white crystalline compound called stevioside.
