Fresh borage leaves and flowers might make a tasty addition to a salad, but medicinal benefits are hard to prove. The possible benefits of borage oil in the treatment of inflammatory disease are under serious investigation, but these studies are in the very early stages. Portions of the plant contain a known carcinogen, and borage products are banned in some countries.
