Kambaa is one of the premiere factories under umbrella of the KTDA (Kenya Tea Development Authority - a state run corporation). Each factory in the KTDA relies on the "small holder" (small individual family farming unit) to provide the green leaf for the making of black tea. Within the KTDA there are 150,000 small holders supplying green leaf to 39 factories scattered throughout the tea growing districts of Kenya. Despite such a diverse supply of green leaf to the various factories there are very rigid quality control mechanisms in place which ensure that farmers tender top quality produce. Kambaa is consistently within the top 4 quality tea estates of the KTDA and indeed Kenya.

Tea is a very important product for Kenya. The industry provides employment for several hundred thousand people from the small holders through to the steamship companies that transport the tea around the globe. Tea is a relative newcomer to the Kenyan agricultural scene. Tea was started by British planters after the Second World War. Many of these planters were feeling unwanted in India (India achieved independence in 1947) and migrated to Kenya. Despite a ban on the transfer of plants and information, these planters smuggled Indian tea plants into Kenya. The plants thrived in the Kenyan climate and today Kenya is the world's second largest exporter of tea.

The Milima mark is manufactured at Saosa Factory which was built in 1929. This is the only factory in East Africa producing orthodox style leaf. This special mark is produced from a delicate clone, which was developed at African Highlands Produce, Applied Research Department. The clone develops a distinct floral characteristic during the cooler months of June and July when the bush growth is slow. We only buy Milima at this time to obtain the best quality. The leaf is selected from the most suitable clonal bushes on estates Kaproret, Saramek and Chemase. Teas for Milima are grown at 6000 feet or higher. Milima means "mountain" or "high place" in the local Kenyan "Swahili" language.

After plucking first thing in the morning, the leaves are gently rolled in order to maintain the floral character and obtain the twisted leaf appearance. After 3 separate rolls, the leaf is allowed to oxidize before being dried, than then sorted into 3 primary grades. GFBOP, GFOP, GFBOP1. Each grade contains a good percentage of golden tips giving the leaf a similar appearance to premium 2nd flush Assam Orthodox teas of North India. The liquors of Milima are bright and orange in color, and impart a floral aroma and taste with a delicious malty almost Bordeaux-like character.

This tea blend was specially created taking into consideration the nuances of the various waters across Canada. To be considered as "the toast of Canada" from a tea perspective, the tea had to be able to "shine" in any water. For this reason, a broad range of origin teas were used. More than 35 various teas were tasted using the water sent to us from various parts of the country. The tasting session extended more then 2 days until the right blend was achieved which combined the best teas a synergistic relation. A few additional refinements were undertaken the final result was an outstanding tea, the best in Canada, if not North America or the world.

The Assam component (2nd flush, June Production) gives a thick malty and full bodied character. The Kenyan component gives a floral-like cup and coppery infusion whereas the South Indian component gives superb fruity and sprightly flavor with a lovely finish. From Sri Lanka (formerly called Ceylon) we used a January production Dimbula which gives an airy piquant flavor that opens the blend. Lastly, to draw everything together we added some Keemun which gives a burgundy depth with light oaky notes.

Canada has a history of consuming the best teas in the world. During the 1960's and 1970's, on a world scale, it was Canadian and Irish tea companies that paid the most for the teas which formed the basis of the blends that were readily available in their respective countries. Sadly, in Canada and to a lesser extent in Ireland, as the tea blenders became older and started retiring, the large tea companies did not see the need to maintain the quality. There were competitive pressures in the market place and these had to be met. Consequently, the overall tea quality in Canada declined over the 1980's and 1990's. Luckily, concurrent with the dramatic quality decline there was a tea trading company in existence at the time, named Hayter and Scandrett that trained it's personnel exceedingly well in the fine points of tasting and recognizing quality teas. These personnel carried the blending secrets and knowledge of fine quality tea that was later transformed into the best tea blend in Canada, resurrecting Canada's long history to drinking and enjoying the world's best teas.

A tea tasters secret recipe for a pick-me-up on a cold day - make this tea hot as above, pour into a large mug and add 4-5 slices of lemon and 2 heaping teaspoons of sugar - sit back and enjoy a tasty energy boost. To make a special iced tea - after you have added the lemon and sugar, pour this over ice in a tall glass - terrific!

French art romanticized the tea hour in their paintings as artists such as Chardin and Boucher painter teapots into the rich still-life works and portrayed society at festive teas set in exquisitely furnished rooms. They captured voluptuous women taking tea in the intimacy of their boudoirs or languishing at tea tables resplendent with silver and lace. One of the more ambitious teas paintings was Barthelemy's "Le The a l'Anglais" which he painted in 1776. The elaborate work depicts Mozart at the harpsichord performing for the gentry seated at tea tables in the Paris salon of the Prince de Conti.

What really makes French tea unique is the accompaniment of "une patisserie." Careme (1783-1833), a celebrated patisserie chef declared a pastry to be one of the noblest forms of architecture. One of our favorite methods of taking French tea is with a buttery croissant, "pain au chocolat" or "le muffin" accompanied by a fruit confiture.
